True Greek Salad

Serving: 1/2 cup (Yield: 100 servings)

Ingredients

  • 11.5 lb (75 cups) of tomatoes, chopped
  • 4.5 lb (50 cups) of cucumbers, peeled, chopped
  • 1.5 lb (4 cups) of red onions, chopped
  • 5.25 lb (50 cups) of green bell pepper, chopped
  • 3 cups of fresh parsley, chopped
  • 50 oz of lowfat feta cheese, crumbled
  • 3.5 lb (13 cups) of whole olives, black, pitted
  • 4 ½ cups of olive oil
  • 3 cups of lemon juice
  • 12 Tbsp of Italian seasoning mix

Steps

  1. Whisk together olive oil, lemon juice and Italian Seasoning Mix.
  2. Pour dressing on salad and mix.
