In 2007, Massachusetts Farm to School worked with the Massachusetts Department of Agricultural Resources and author and culinary professional Amy Cotler to create a cookbook for institutional cafeterias focused on ingredients that are grown in Massachusetts. All of the recipes included in the cookbook have been tested by food service professionals and students alike, for taste & ease of preparation. In addition to recipes, the cookbook includes tips on getting started with local procurement, a seasonality chart, preparation tips for various vegetables, and an educator guide.
