Crisp Cucumber Salsa

Serving: 2.5 cups

Ingredients

  • 2 cups of cucumber, peeled & seeded
  • 1/2 cup of tomato, seeded & finely chopped
  • 1/4 cup of red onion, finely chopped
  • 2 TB of parsley, fresh, minced
  • 1 of jalapeno, seeded & chopped (optional)
  • 4-1/2 tsp of cilantro, fresh, minced
  • 1 of garlic clove, minced
  • 1 cup of sour cream or greek yogurt
  • 1-1/2 tsp of lemon juice
  • 1-1/2 tsp of lime juice
  • 1/4 tsp of cumin, ground
  • 1/4 tsp of salt

Steps

  1. In a medium sized bowl, combine the cucumber, tomato, onion, parsley, jalapeno, cilantro and garlic.
  2. In a small bowl, combine the sour cream (or greek yogurt), lemon juice, lime juice, cumin and salt. Pour over cucumber mixture and toss gently to coat.
  3. Serve with whole wheat tortilla chips or whole wheat pita triangles.
