Apple Pizza Strudel

Serving: 22 portions

Ingredients

  • 1 tsp (+1/2 tsp for brushing) of Olive Oil
  • 2 TB of Garlic, chopped
  • 1-1/2 cups of Yellow Onion, chopped
  • 2 lbs. of Apples, diced
  • 11 cups of White Beans, canned
  • 4 cups of Kale or Spinach, chopped
  • 2 cups of Quick Rolled Oats
  • 1-1/2 tsp of Salt
  • 1/4 tsp of Pepper
  • 1 of Whole Grain Pre-Made Pizza Crust
  • 2 TB of Sesame Seeds

Contributes to NSLP meal pattern:
2 M/MA, 1⁄4 cup Vegetable; 1 Grain/Bread; 1⁄4 cup Fruit

Steps

  1. Saute garlic in olive oil.
  2. Add onions to garlic & olive oil, cook until caramelized.
  3. Remove to bowl - add all remaining ingredients except crust & sesame seeds. Mix to combine.
  4. Roll dough into 18x12 shape. Arrange filling along 18" side of dough, roll folding ends under.
  5. Place on greased sheet with seam side down.
  6. Brush with olive oil and sprinkle with sesame seeds.
  7. Bake at 400°F for 20 minutes or until golden brown.
  8. Cool on rack. Slice into 22 equal servings.
