Apple Yogurt Salad

Serving: 1/2 cup (Yield: 100 servings)

Ingredients

  • 10 lb 8 oz of apples, fresh, #125-138, AP
  • 2 lb of raisins, seedless, unsweetened
  • 2 lb 8 oz of yogurt, vanilla, low-fat

Steps

  1. With gloved hands, wash and core apples, do not peel. Chop into bite size pieces. Add raisins and yogurt. Mix well.
  2. CCP: Hold at 41°F or lower.
  3. Serve cold with #8 scoop (1/2 cup).
