Baked Fish with Ritz Cracker Topping

Serving: 240 - 4 oz servings

Ingredients

  • 60 lbs. of Local White Fish (such as, Pollock, Hake, or Haddock)
  • 7 lbs. of Ritz crackers, crushed
  • 2/3 cup of Garlic powder
  • 1-1/3 cups of Parsley, dried
  • 1-1/3 cups of Old Bay seasoning
  • 2/3 cup of Lemon juice
  • 4 cups of Butter

Steps

  1. Rinse fish & cut into desired portion size
  2. Melt butter
  3. Mix Ritz crackers, pepper, garlic, parsley, and Old Bay with the melted butter
  4. Place fish on an oiled pan and cover with Ritz mix
  5. Bake at 375°F for approximately 20 minutes until fish is at desired temperature (155°F)
