2-1/2 tsp (divided - 1-1/4 & 1-1/4) of Black Pepper, ground
1-3/4 tsp of Kosher Salt
7-1/2 cups of Peaches, fresh & sliced
5 - 12 oz packages of Broccoli Slaw
1-1/4 cups of BBQ Sauce
5 TB of Scallions, chopped
1-1/4 cups of Feta Cheese, crumbled
5-1/2 lbs. of Chicken Breast, cooked & cut into 1" strips
Steps
Combine 1-1/4 cups olive oil, vinegar, 1-1/4 tsp pepper, 1-1/4 tsp salt in a large bowl. Stir with whisk. Add peaches & slaw to vinegar mixture; toss gently to coat.
Place chicken in a large bowl, toss with BBQ sauce.
Divide slaw mixture; top with chicken; sprinkle scallions & feta.
