Blueberry Delight

Ingredients

  • 48 oz of Oats, quick cooking
  • 32 oz of Yogurt, Greek, vanilla, fat-free
  • 24 oz of Brown Sugar
  • 6 of Eggs
  • 3/4 cup + 1 TB of Cornstarch
  • 3 cups of Sugar
  • 192 oz of Yogurt, Greek, vanilla, fat-free
  • 3 qts of Blueberries, frozen (IQF)
  • 4-6 TB of Flour

Steps

  1. Preheat oven to 325°F. Spray (2) 12x20x2" pans with pan release spray.
  2. In a large bowl combine yogurt, oats, and brown sugar. Mix well.
  3. Place 3 lbs of oat mixture into each pan. Press out mixture evenly.
  4. Pour eggs into large bowl and add cornstarch and sugar. Using a whisk, blend until smooth. Add greek yogurt and stir until blended.
  5. Place frozen blueberries in steam table pan. Toss with flour.
  6. Gently fold blueberries into yogurt mixture. Divide and pour evenly over the oat mixture.
  7. Bake for 1 hour and 30 minutes. Remove from oven, cover with foil, bake for another 30 minutes. Then cool to 41°F.
