Bulger Salad with Red Peppers, Cucumbers, and Cheese

Serving: 20

Ingredients

  • 6 of Red Bell Peppers, blistered then chopped
  • 3 cups of Bulger
  • 5 cups of Water
  • 2 bunches of Scallions, diced
  • 3 of Cucumbers
  • 3 of Garlic Cloves, minced
  • 6 TB of Mint, fresh, chopped
  • 6 TB of Cilantro, fresh, chopped
  • 3 cups of Feta Cheese, crumbled
  • 9 TB of Lemon Juice
  • of Salt & Pepper
  • 3/4 cup of Olive Oil

Steps

  1. Preheat oven to 400°F.
  2. Add peppers to a sheet pan and place in oven for 20 minutes, until blistered.
  3. Place bulger in a bowl, pour boiling water over and cover for 20 minutes.
  4. In a small bowl mix: lemon juice, 1.5 tsp salt, 1/4 tsp pepper, and olive oil. Then add chopped herbs.
  5. Stir dressing mixture into the bulger then add the red peppers and cucumbers. Add crumbled cheese.
