Cilantro Lime Rice

Serving: 100 (1/2 cup)

Ingredients

  • 5 lbs. of Rice, brown
  • 2 TB of Salt, kosher
  • 4 bunches of Cilantro, fresh
  • 1 cup of Lime juice
  • 4 cups of Baby Spinach
  • 2 of Jalapenos

Steps

  1. Place rice in a full size 4" hotel pan.
  2. Add salt & 1.5 gallons of water.
  3. Cover tightly with foil & bake at 350°F for 45 minutes.
  4. Blend remaining ingredients.
  5. When rice is done cooking, mix in blended vegetables & herbs.
