Grilled Chicken with Cucumber Peach Salsa

Serving: 4

Ingredients

  • 2 cups of Peaches, peeled and chopped
  • 1 cup of English cucumber, chopped
  • 1/2 cup of Red bell pepper, chopped
  • 2 TB of Lime juice
  • 1/2 cup of Feta cheese, crumbled
  • 3 TB of Mint, fresh, chopped
  • 4 of Chicken breasts, boneless, skinless
  • 1 tsp of Cumin, ground
  • 1 tsp of Brown sugar
  • 1/2 tsp of Kosher salt
  • 1 TB of Olive oil

Steps

  1. In a medium bowl, combine peaches, cucumber, pepper, and lime juice and set aside.
  2. Preheat grill or grill pan to medium-high heat. With a sharp knife, slice chicken breasts horizontally to yield two cutlets. Sprinkle both sides of with pepper, cumin, and brown sugar, and drizzle with olive oil. Grill chicken for 3 minutes per side or until done.
  3. Stir feta and mint into salsa, spoon over chicken, and serve.
