Kale Pesto

Serving: 64 (1 TB)

Ingredients

  • 2 lbs of Kale
  • 1-1/2 cups of Olive Oil
  • 1/2 cup of Parmesan cheese, grated
  • 2 TB of Lemon juice
  • 1 TB of Garlic, chopped
  • 1 TB of Kosher salt
  • 1/2 tsp of Black pepper, ground

Steps

  1. Remove thick stems from kale and tear into 2 inch pieces
  2. Make pesto in batches in a food processor. Add kale until food processor is half full, add a drizzle of olive oil and process until smooth.
  3. Transfer to a large bowl. Repeat with remaining kale and olive oil.
  4. At the last batch, add cheese, lemon juice, garlic, salt, and pepper. Add to bowl and stir well to blend.
