Oven Roasted Fish Fillets

Serving: 8 oz (Yield: 6 servings)

Ingredients

  • 4 - 8oz of firm white fish fillets (Haddock, Pollock, Hake)
  • 2 Tbsp of salted capers, rinsed
  • 1 Tbps of finely grated lemon zest
  • 1/2 cup of finely grated parmesan cheese
  • 2 oz of butter, softened
  • of cracked black pepper

Steps

  1. Preheat oven to 400 F.
  2. Place fish fillets in non-stick baking dish.
  3. Combine capers, lemon zest, parmesan, butter, & pepper.
  4. Spread mixture over the fish Bake for 20 minutes or until the fish fillets are cooked and tops are golden.
