Papas Bravas

Ingredients

  • 1/2 cup of Olive Oil
  • 3 lbs of Spanish Chorizo
  • 3 lbs of Mushrooms, sliced
  • 3 oz of Red Onion, chopped
  • 3 oz of Garlic, chopped
  • 5 lbs of Potatoes, small, boiled & quartered
  • 1-1/2 quart of Chicken stock
  • 1 cup of Red Pepper, roasted & julienned
  • 1/2 cup of Green Onions, chopped
  • 2 TB of Oregano, fresh & chopped
  • 2 TB of Rosemary, fresh & chopped
  • 1 TB of Thyme, fresh & chopped
  • 1 tsp of Salt
  • 1/2 tsp of Crushed Red Pepper
  • 1-1/2 cups of Cilantro, fresh & chopped

Steps

  1. In large pot, heat oil over medium-high heat. Saute chorizo, mushrooms, onion and garlic until mushrooms are wilted, about 5 min.
  2. Add remaining ingredients except cilantro; bring to a boil.
  3. Reduce heat and simmer until heated through, about 5 min.
  4. Chill before using.
  5. For each serving, to order, heat 1 cup potato mixture; garnish with 1 tbsp. cilantro.
