Potato & Broccoli Soup

Ingredients

  • 8 oz of Butter, unsalted
  • 2 cups of Onion, chopped
  • 10 cups of Potatoes, peeled & diced
  • 24 cups of Broccoli, fresh or frozen
  • 4 cups of Heavy Cream
  • 2 TB of Black Pepper
  • 2 TB of Salt
  • 1 tsp of White Pepper
  • 2 TB of Garlic, granulated
  • 24 cups of Milk, 2%
  • 1 tsp of Hot Sauce
  • 2 TB of White Wine Vinegar
  • 2 cups of Cheddar Cheese, shredded

Steps

  1. Saute butter, onions, and potatoes until slightly soft.
  2. Add the rest of the ingredients and simmer for one hour.
  3. Thicken with cornstarch and water if needed.
