Quinoa Salad

Ingredients

  • 2 cups of quinoa
  • 2 cups of long grain brown rice
  • 2 cups of tomatoes, chopped or sliced
  • 1 cup of red peppers, chopped
  • 1 cup of cucumbers, peeled and chopped
  • 1 cup of celery, chopped
  • 6 oz of lite Italian dressing
  • 8 oz of fresh apples, sliced and unpeeled
  • 1 cup of feta cheese, crumbled
  • 1 cup of Craisins (optional)

Steps

  1. Add all ingredients to a bowl and toss.
