Red Cabbage and Apple Slaw

Serving: 1/2 cup (Yield: 100 servings)

Ingredients

  • 1 cup (approximately 8 limes) of lime juice
  • 1/4 cup of apple cider vinegar
  • 1 Tbsp of salt
  • 1 Tbsp of black pepper
  • 2 Tbsp of ground cumin
  • 2 cups of vegetable oil
  • 45 cups (about 9 lbs) of sliced cabbage
  • 8 cups of grated carrots
  • 1 gal (8 lbs) of grated apples
  • 8 cups of chopped green peppers
  • 4 cups (2 bunches) of chopped cilantro, including stems

Steps

  1. Combine the lime juice, vinegar, salt, black pepper, coriander, cumin, and oil in a large bowl. Stir with a whisk.
  2. Add the sliced or grated fruits and veggies, as well as the cilantro. Toss well.
  3. Taste for seasoning and serve, or chill for up to 3 hours.
