Spicy Roasted Fresh Carrots

Serving: 1/2 cup (Yield: 50 servings)

Ingredients

  • 7lbs of baby carrots, raw
  • 1 tsp of oregano leaves, dried
  • 3 Tbsp of vegetable oil
  • ½ tsp of lemon juice, raw
  • ½ tsp of orange juice, raw
  • ½ tsp of lime juice, raw
  • 2 tsp of salt
  • 1 tsp of black pepper
  • ½ tsp of curry powder
  • ½ tsp of paprika
  • ½ tsp of chili powder
  • 1 tsp of onion powder
  • 2 tsp of garlic powder
  • 2 Tbsp of parsley, raw

Steps

  1. Peel, wash and cut the carrots into quarter inch slices. Add the cut carrots into a large bowl.
  2. Ingredients to add: ½ tsp lemon zest, ½ tsp orange zest, ½ tsp lime zest. Add the spices, herbs, oil and citrus into carrots and mix well.
  3. Ingredient to add: cooking spray as needed. Spray the sheet pan with cooking spray and add the seasoned carrots in even layers on the pan.
  4. Roast in a 350 degree oven for about 20 minutes. Garnish with fresh slices of citrus if desired.
