4 No.10 cans or 28lbs fresh of sliced apples, canned or fresh
4 of cinnamon sticks
1 cup of water
1 cup of sugar
1 qt of strawberries, fresh
Steps
Heat apples in steam jacketed kettle or tilt skillet.
Add cinnamon sticks, water, and sugar.
Cook apples until tender.
Add strawberries and cook for 5 minutes.
Remove from heat and press through strainer.
Stir until smooth.
Serve warm or chilled. CCP: If serving warm, hold for hot services at 135 degrees F or higher.
If serving chilled: CCP: use pre-chilled shallow pans to cool from 135 degrees F to 70 degrees F within 2 hours. Cool to 41 degrees F before and during cold service.
