Strawberry Hummus Pita Sandwich

Serving: 32 - 1/2 pita pocket sandwiches

Ingredients

  • 16 of whole wheat pita, cut in half
  • 16 cups of chicken, cooked & shredded
  • 4 cups of red onion, sliced
  • 16 cups of cucumbers, sliced
  • 32 of strawberries, sliced
  • 4 cups of feta, crumbled

Steps

  1. Hummus: Place strawberries, garbanzo beans, lemon juice, salt & pepper into a food processor, blend until smooth.
  2. Sandwiches: Spread inside of pita with strawberry hummus, fill with chicken, onion, cucumber, and feta.
