Strawberry Muffins

Serving: 18 muffins

Ingredients

  • 3 cups of Whole Wheat Flour (or 50/50 mix)
  • 2-1/4 tsp of Baking Soda
  • 3/4 tsp of Salt
  • 1 cup of Sugar
  • 1-1/2 cups of Unsweetened Applesauce
  • 1 pint of Strawberries, sliced

Steps

  1. Preheat oven to 350°F.
  2. Combine flour, baking soda, and salt.
  3. Mix sugar and applesauce together.
  4. Slowly add the flour to the applesauce mixture. Do not overmix!
  5. Gently fold strawberries into batter.
  6. Spoon into muffin tins and bake for 25 minutes.
